Nipa Thai has won many awards for its cooking, including a Thai Select Award from the Thai government for authenticity.
So, it’s not surprising that its cuisine is considered the best outside of Bangkok. Nipa means “shining light” in Thai, and at Royal Lancaster London, we think that the name sums up the restaurant perfectly.
Nipa Thai goes for total authenticity, with a decor of Thai-sourced teak, and a traditional all-female staff. Dishes are a balance of key flavours: sweet, sour, salty, spicy and bitter. All of these are present in Head Chef Sanguan Parr’s signature dish, Pad Thai, which is a street market staple, traditionally produced in a cone-shaped banana leaf.
